This is quick, easy, fairly cheap and will fill several people up.
It feeds 4 hungry bikers or 8 regular folks. Got more mouths to feed? Just double or triple the recipe.

2 lbs ground meat (I usually use half beef half deer, when I have it)
1 lb sharp cheddar cheese
6 eggs
1 can rotel tomatoes and chilis, drained
1/2 cup onion diced
3 or 4 cloves of garlic
1 1/2 cups chopped spinach
2 loaves of french bread split lengthwise and scooped out

brown the meat and onions and drain the grease. add the garlic and spinach and let the spinach gilt down. break the eggs and whisk them up then add to the meat along with the rotel cook until the eggs get firm stirring as ya do. add half he cheese and remove from heat.

while you are doing that slip the french bread in the oven on 400 for a few minutes to let it crisp up. take the egg and meat mixture and fill the boats you created when ya scooped out the bread. sprinkle the remaining cheese overhe top and run under the broiler til it melts. divvy it up and serve with a cold one
