The "carb farts" come from the needle - even when the jetting & idle mixture is as good as you can get it. You can replace the needle with the infamous N65C (came stock in the 1988 XL1200) or get the one "kenfuzed' has in his kit.

You can see the problem on dyno charts - in the 2500 rpm range, the air / fuel ratio spikes way lean for a moment. You'll never get a flat line on the A/F charts, but you can get pretty darn close with the right needle. Both I mentioned have a different taper than the stock needle that comes in any other CV carb.

One other thing - if adjusting the idle mixture screw from the baseline of 2.5 turns out does nothing, or next to nothing, that nearly always means the slow jet is too big. I don't think a 45 is for your application, but they do make a 44 & a 42 is what a 1200 (74") Sportster needs, even with free-flowing exhaust & air cleaner.

Getting the idle to around 3000 rpm range right is the most time-consuming part with a CV carb, but once you've got it dialed in, you won't have to mess with it again.
