Breakfast Burritos

    California Central Coast, ya gotta love peppers. Last year my wife did a terrific garden and I eventually came up with the best breakfast burrito. This makes about six medium. One or two for breakfast with (strong) coffee, roll the rest in foil and munch throughout the day:
    Rob's not quite world famous breakfast burritos
    • 1 potato cubed small. You can use red, russet, whatever. We even got blue potatoes at our farmer's market
    • 1/2 a red bell
    • 1/2 an anaheim pepper (these are mild)
    • 1/2 a Serrano (small and kinda spicy) pepper
    • 1/2 a yellow onion, medium
    • cilantro, couple tablespoons chopped
      2 eggs
      Maybe 1/2 to 3/4 cup of shredded jack or cheddar

    Get the tatoes cooking in an oiled nonstick pan while you dice the peppers. When the tatoes are brown(ish) add the other veggies and reduce heat to low. Toss once in a while, making sure to catch the stuff in the pan again. When it's the way you like (crisp? crunchy? blackened?) add the cilantro. Toss some more to mix it up. Scramble the two eggs and add them. While they are cooking, put the tortillas on the griddle to warm.

    Add the finished mix to the tortillas, add cheese, roll up, eatup. You can adjust the recipe to taste, use jalepenos, green peppers, zuchinni, spinach, or whatever you like. Tastes good and pretty healthy. I've been doing this for over six months straight, every day. Wife likes 'em, and I often have one to share with someone at work.

    Those sound good. I always make one with scrambled eggs, sausage, green pepper, & onion. Then I roll it up in a flour tortilla with cheese and tabasco sauce. We have put hashbrowns inside them also. Yummy!!!! Now I'm hungry for some of that.

    I use green chiles in mine & make some with chorizo as well but shovelrobs sounds real good I just need to find the anaheim peppers

    :) I like that hot Chinese mustard. Coat all the Chinese food with it. Love the way it makes the top of your head sweat and the way it burns your sinuses, man good stuff. :D
