I replaced the idle screw with the CVP Idle Speed Screw. Now what I need to know is how many turns once the screw touches the stop or how much of a gap there should be between the bottom of the throttle plate and the venturi.

Unfortunately there is no set amount of turns since the brackets on these carbs were so roughly stamped by the factory, so each one can vary greatly. One bracket could have more of a bend than the next. Generally a half turn beyond where the screw begins to move the throttle flap will give a baseline. The moment the bike starts you can be ready to make adjustments.
