I have been wanting to do this for a long time but just haven't gotten to it. Right now I have some thinly sliced top round marinating in a cracked pepper and garlic marinade. Unfortunately I am going to have to do this batch, (the test batch) in a food dehydrator. I am pretty sure that it will come out good but I would like to do that on my smoker and laying some smoke on it. Kind of excited to taste how it turns out.

Smoked Jerky is good, and you can put a lot more on the smoker
then in a dehydrator and it won't stink up the house...

Slow and low on he smoker and it will be juicier than the
    dehydrator method...

No worries Paul. Yep, I just got the meat in the dehydrator and it will stay there for about 8..5 hours. I was hoping to get other stuff done but I ccame home to a sick child that is going to the doctor. :(

Yeah, I would have to say that my first batch of Jerky did not turn out too well. I will have to redo it. I put in the dehydrator a little too long. :banghead

yeah that's what I found with the dehydrator, it really drys it out,

Next time get some top round and have the butcher slice it for you into
strips for the smoker and marinade it the night before in a baggie, then
put on the smoker, get it cut a bit thicker than you normally do (they will slice
it for free) and load up the smoker...

Yeah that is what I had was top round and it was cut a tad too thin. Smoker is a little time consuming for me now but I will give it another go in the dehydrator and just keep in for less time.

    Have it sliced thicker

Also try London broil. Very lean.
