    got another hour anna half in the oven covered in foil at 225 to bring temp up, then
    pull, it will cook internally for about another hour while cooling, then off to the chopping block

    ACtually it's pretty well done inside the "red" you see is from the marinade and Applewood seasoning as well as the pink smoked ring that you get when smoking meat.

    The red juice is the marinade/apple juice mix I use to keep it moist and tasty, cut a bit off and it is goooooooooood....
