    another great recipe...

    My lemon turkey recipe
    Great!!!!!!! Enjoy . .

    Ingredients:
1 whole Turkey (weight is dependant on how many servings
    are required)
1 large lemon, cut into halves
    sprig of rosemary
    salt and pepper to taste
butter or olive oil, whichever you prefer
    Heat oven to 350 degrees
Rub butter or oil over the skin of the Turkey until it is completely coated

Take a knife and gently separate the skin from the breast meat
Slide lemon halves under the skin with the peel side up. This way the juice from the lemon will coat the breast.
Season skin of the Turkey to your preference, and place sprig of rosemary into it .
Cover and place in oven for 30-45 minutes.

Remove cover and continue to roast until juices run clear, basting every 15-20 minutes depending on the size of the bird.

If you've followed these steps correctly, your Turkey should look like the one in the attached photo.

    Bon Appetit!

    Turkey the Bear way

    1 frozen turkey 12 to 14 lbs
    2 cups chicken stock
    1 tbls tabasco
    1 tsp poultry seasoning
    1/4 cup worchestershire sauce
    1 tsp salt
1 half gallon Jack Daniels 100 proof
1 ice chest filled with cool water with a cup of salt disolved in it.

Open the whiskey and pour a shot. Drink that. (Ya have to be sure you have good whiskey, of course)
unwrap the turkey and place it in the cooler to thaw/brine. Have a shot of whiskey.
Spend the rest of the day sipping whiskey and polishing the bike. Spend evening sipping whiskey and hanging out.
Next morning make coffee add a shot of whiskey and remove the bird from the brine. Remove the bag of giblets save for gravy.
Combine the chicken stock, tobasco, poultry seasoning, 1 tsp salt in a pan and heat for a bit to help flavors mix. Let cool then add a cup of whiskey, pouring yourself another shot to make sure it hasn't gone bad.
Inject the bird with the mixture making sure to do the entire bird. Dust the outside with cayenne pepper and after setting the bird on the lifter add two halved oranges to the cavity.
Dunk in 350 degree peanut oil for 3 to 3 1/2 minutes per pound or until the temperature at the thigh joint registers 170 degrees
remove from oil and hang in a tree to cool a bit. The temp will go up another 10 degrees or so then cool.
While waiting for the bird to cool a bit have a shot of whiskey.

You now have a beautiful brown bird that is flavorful and moist and above all...dealing with your inlaws isn't a big deal. (In case of really BAD inlaws more whiskey may be called for.)

Since after Thanksgiving turkey prices plummet around here I do several through the year. I have 8 birds in the freezer that were just 58 cents a pound and when I told the store manager I was wanting to buy a bit over a hundred pounds worth he let me have them for 45 a pound.

And don't forget the carcase after that Christmas dinner. Boil it and make soup from what's left over. :D
