    I have a 2003 goliath softtail with 520 miles on a Revtec 100 motor.

I just changed the plugs they are new.. when idling it seem to be run fine.. as I increase throttle it will miss when I hold it steady at about 1/3 throttle.. any ideas on how to correct this... I have the Mikuni carb tuning doc, is that a pdf or file on the revtech motors floating around??

if it wasn't missing before check the plug wires to make sure they are properly installed sometimes they don't go all the way on the plug and you could be getting a missfire when you accelerate and the firing interval shortens (fires more often)

Also if that doesn't work replace one of the new plugs with an old plug do one at a time see if that cures it might be a bad plug.

As long as you didn't change anything else.

Did it run correctly and just start doing this?
Did you check for water in the fuel?
Will it continue to rev if throttle is increased?
Does it stutter and get worse as RPM is increased?
Did you drain the float bowl and check level?
When you assembled the bike did you use a petcock with a filter? Filter in line?
Between what HRK said and the fuel system you should find it.

i had a similar problem with my kit bike. Coil was bad. I was getting cold exhaust from the rear cylinder, hot from front. i switched plug wires front to back and got cold exhaust from the front cylinder. I bought new plug wires and repeated the test. same thing. had to be coil. bought new coil and all was fine.
