What are you looking for? a Marinade? A Rub? gas grill, or charcoal? I have found that there is a Marinade put out by Jack Daniels..... in a zip lock pouch...tear open, add meat, marinade 24 hours, then grill.....GREAT!!! There is mesquite, teriacki and maybe one or 2 others...... if over gas, that is good, if over charcoal, I have then also used Cherry or Hickory wood smoke.....

I use natures seasoning & let set in for a couple hours On the charcoal grill with some pecan wood chips , I soak the chips in a coffee can of water & right before I put the meat on & drain the chips & put them in the carcoal & within seconds I put the meat on close the lid & let it smoke away trying to keep the temp around 350 -375 I have a gas grill but don't like it ,told my son he could have it
for pan frying I do the meat about the same & butter the pan
PS I also have a can (beer) with the top cut off I put water in it & let set on the grill in the cornor , it keep's the meat moist through out

ok, here is a dry rub that i use....

    3 tbl chili powder
    2 tbl paprika
    1tbl cayenne
    1tbl ground cummin
    1tbl coriander
    1 tbl garlic powder
    1 tbl onion powder
    1 tbl kosher salt
    1 tbl blk pepper

sometimes i will also add oregano and dry mustard.....

mix all the above real good, store in an airtight container...will keep a long time.
take mixture and rub on the meat both sides, pressing it into the meat...wrap in plastic wrap and set in fridge for at least 2 hrs, overnite is better.
get a nice oak fire going in the pit, let it burn down till nearly embers, put the meat on....6 or 7 minutes per side....depending on heat level and how done you want. to test heat level, hold your hand over the grill at grill level....count the seconds you can hold it there.....3 seconds is just about right......
on a gas grill, use medium heat, and about the same amount of time.....let us know how it goes!!!!!!!!
i mentioned oak, as that is what i have the most of....but any of the woods mentioned will work.....i dont like mesquite....takes the flavor of the meat away.....my opinion.......lots of folks love it.....:)
