Breakfast Nachos - Football Season Favorite

This recipe was created by accident about 10 years ago and it still stuns my buds who come over to watch the Rams games during football season.

Ingredients -

4 Eggs
1 cup of Pepper Jack Cheese
1 tablespoon of chopped garlic
Half pound of fresh sausage
Half cup of chopped onions
Quarter cup of fresh mushrooms

Your favorite salsa, hot sauce, and tortilla chips

Simple -

Cook the sausage, onions, mushrooms, and garlic together in a frying pan. Scramble eggs in a bowl and add 2 seconds worth of tap water and stir again. Add eggs to sausage mixture once sausage is done.

Once eggs are cooked, add cheese and let the cheese as the eggs and sausage cool down. (Turn off the stove..haha)

Place tortilla chips on large plate. Spoon sausage and eggs mixture on top of tortillas. Add favorite hot sauce, salsa, and more cheese!!

This goes great with a light tasting beer around 9:30am in the morning.

If you are into it, add some fresh peppers to the sausage mix as well.

Hehe, well I am a Rams fan and they haven't been the easiest to watch for the last x amount of years .. hehe.

I just ate... Now I am hungry again..........

If you have never tried, do it...
My favorite is using butcher shop fresh sausage, garlic, mushrooms, and eggs. If I am feeling it, fresh jalapenos FTW!!
