I use SAE 50 racing oil in my shovel with about 5 oz. of Zmax mixed in. It definitely runs a bit cooler than it did when I was running H-D 20/50 with no additive.

You can git away with that on the older bikes. The tolerances weren't as tight as the newer bikes.
And if you ran synthetic oil you wouldn't need zmax, all you'd do is dilute the oil with zmax in synthetic oil
    I run Mobile 1 oil

i iz running sae 60 HD oil at this time. considering 20W50 racing oil, i run that in my BMW (car), love it, but didn't know if it would be OK with the shovel.

i wont dyno a motor air cooled harley that is until it gets to 250 . then ill put the fans on and do the pull and ofcourse leave them on i have seen them when they are lean to run up to 280 until i fatten them up . 225 to 240 is normal to see i have seen my duece in city traffic go up to 270 . i set the t max alarm for temp (check engine light will come on if it gets that hot and go back out when it cools down ). at 260 . so i would not worry if the bike was running normal at 215- 220 in the summer .shovel sporty twin cam evo .pan who cares put some good oil in it!

the oil temp needs to be 220* minimum to boil the water and junk out of it. in the heat we have down here, my oil temp runs 250* normal......a little more if i am tryin to keep up with cardboard,,,,,,,,,,,,,,
